Quick and easy chickpea dish
I joked recently that I’ve been eating so many chickpeas I’m going to soon turn into one. But hey, what can I say, I like them!
Recently I discovered this recipe from Nigella Lawson, which takes all of 5 minutes to make, is delicious, and easy to pair with fish, seafood, or simply a nice soft boiled egg. We’ve made it twice now – once with grilled salmon, and once with poached eggs.
Chickpeas with Greens
1 tbsp oil of your choice (olive works nicely, but so does canola)
2 tsp cumin seeds (if you don’t have cumin seeds, powder works fine, but increase the amount slightly)
4 cups cooked chickpeas
1/2 cup arugula, spinach, or other greens
1 tsp sea salt or kosher salt
1/4 cup sweet sherry or other sweet wine (I had grappa on hand and used that, it was delicious)
1. Heat the oil and cumin seeds in a large frying pan.
2. Add the chickpeas, arugula or greens, salt and sherry and stir over a medium heat until the greens have wilted and the chickpeas are warmed through.
3. Top with poached or soft boiled eggs, grilled salmon, or other seafood of your choice. Or, serve as is as a light meal for two.
